Colorful Tabbouleh
"I grew up eating Tabbouleh and Mediterranean food. I decided to take a twist on the regular tabbouleh and brighten it up with some of my favorite vegetables. My Prepdeck made it so easy to prep and even easier to assemble!" - Chef Camille Bernardi

WHAT you'll need & HOW you'll need it
2-3 full bunches Curly Parsley, roughly chopped
5 mint leaves, finely ribboned
1/2 small red onion, diced
1 small Persian cucumber, sliced with the skin on
3 colorful mini sweet bell peppers, slices
1 cup color cherry tomatoes, halved
1/2 cup cooked Bulgur
1-2 large lemons, juiced using Prepdeck's attachable juicer
2 tbsp extra virgin olive oil
1/2 tbsp salt
1/3 tsp cayenne pepper
Fresh ground black pepper

Camille's Cooking Method
First, cook the bulgur. Bring 1- 1/2 cups of water to a boil. Add a pinch of salt and a little Extra Virgin Olive oil. Once it comes to a boil, add bulgur, put heat on low and cover for about 10 minutes. Once the water is completely absorbed, fluff the bulgur and transfer into your large Prepdeck container so it can cool.
While you’re waiting on the bulgur to cool, it’s time to prepare those vegetables! Use Prepdeck’s various prepping tools to slice, chop and dice all of your gathered ingredients. Follow the measurements and techniques listed above, while using Prepdeck’s built-in measurement markings to ensure that you have the correct amount of each!
I recommend using the shallow containers for smaller items and the mini containers for your spices and olive oil!
Once everything has been prepped, combine your veggies with the cooled bulgur in a large mixing bowl. Dress with salt, Extra Virgin Olive Oil, lemon juice, and cayenne.
Serve right away or store the leftovers using a large container. Enjoy!
